° 50 g grated cheddar
° 4 corn tortillas
° 1 small can of natural red beans
° 1 small can of crushed tomatoes
° 1 onion
° 1 green pepper
° 2 tbsp. tablespoon chilli olive oil
° tex-mex spices
° salt

*Preparation:
Peel and chop the onion finely. Heat the oil in a skillet. Add the onions and let them brown for 5 minutes.
Add the minced meat, stir for 3 minutes over high heat to brown. Adding crushed tomatoes, seeded and pepper and the drain red beans. Salt and sprinkle with spices. Let simmer covered for 10 minutes.
Place 4 wheat pancakes in the bottom of a gratin dish. Top the center of each with stewed beef. Close the fajitas, sprinkle them with grated cheddar.
Slide the dish under the hot grill of the oven for a few minutes to brown the cheese. Serve hot.
